Apple Fritter Muffins Recipe

Ingredients

  • 13.5oz light coconut milk
  • 12 medjool dates (pitted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 3 cups whole wheat pastry flour
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon powdered ginger
  • 2 apples (diced)

Directions

Step 1

Preheat oven to 190°C / 375°F / Gas Mark 5.

Step 2

Meanwhile, combine coconut milk, dates, vanilla, and vinegar in a blender and process until smooth.

Step 3

Combine dry ingredients in a large bowl.

Step 4

Fold in wet mixture and apples, until well blended.

Step 5

Spoon batter into a lined muffin pan.

Step 6

Bake for 15 minutes.
